Chore Boys Getting Harder to Find.
“Chore Boy” Stainless Steel Scouring Pads are getting harder to find. Sure, they’re a little aged, rarely advertised, and popular only with those that grew up on them, but that’s not the reason they’re disappearing. They’re the favored brand used in some processes to create illegal drugs and store keepers are finding that if they don’t sell them, it’s one more reason for those doing this to not come in. I don’t blame them. Would you rather put up with a drug dealer in your store or the few complaints you may get for not carrying them any longer.
For those of you addicted to the Chore Boy, use the links above to get your supply while they last. As a little secret, the store keeper may keep a stash for those of us who just want to wash the dishes.
Cookware Shipping Weight Clue to Quality
Something to consider when ordering commercial cookware is the shipping weight. This does not apply to all cookware, but it’s important to consider when comparing quality. Many types of cookware are made from materials where the weight is indicative of the overall quality.
Have you ever picked up old stainless steel cookware made 30 or 40 years ago? It’s heavy! If the piece has been cared for, it’s probably still in good condition too. The quality of the steel was higher in many pieces of cookware then. The alloys made to use it were heavier.
Over time, that weight turned into a negative instead of a positive for ergonomic and cost reasons. This means that you need to find out if the weight of a piece has been reduced due to higher tech construction or just lesser quality materials. Is a stainless steel piece lighter because of thinner steel or has it been made with a copper or aluminum plies to decrease the weight in a quality way? You have to compare apples to apples, then look at the shipping weight.
Sometimes the supplier may do one better than the shipping weight and give the exact weight of the pieces, so look for this information in the specifications. Remember this is just one specification to check. If you find that a light piece is getting good reviews and it’s lightweight, there’s a chance that this is a nice higher tech piece.
Good commercial cookware is an investment that requires research and the weight is just one of the many considerations. A lightweight piece may mean inferior durability which drastically reduces the value of your investment. If a stainless steel piece is bent, this can cause a hot spot on the piece and ruin it and increase operating cost when you need to replace it.

Commercial Cookware for Home Chefs
Pros, this post is not for you. Professional Chef’s already understand the benefits of commercial cookware. Not only do they understand it, they demand it! They demand the easy cleaning, even cooking temperatures, durability, and professional design.
Let’s look at some reasons that a home chef should demand the quality of commercial cookware.
Cooking Safety
Old cheap pots and pans suffer from heating and cooling rapidly. The rivets and screws that hold the handles on begin to wear out. This can lead to you dropping hot food on you. Not only can it ruin a meal, it can severely burn the cook, a child standing nearby, or a pet.
Time And Energy Conservation
Modern professional cookware distributes heat more evenly and more efficiently. It takes less time to heat and it takes longer to cool down. This allows you to remove a hot pan and place another on the burner while your food stays hot longer. There are more benefits to this than energy conservation, but over time the energy costs alone can help pay for the higher priced Commercial cookware.
Easier Cookware Cleaning
The surfaces on commercial cookware sticks less than cheaper cookware. Temperature changes in cheap cookware can allow it to crack, so you must let it cool. Commercial cookware can take the quick temperature change, so you can let one start to soak while still warm and the food is less likely to stick.
Motivation
Commercial cookware has a feel of quality and the performance is so pleasing that you will begin to get more adventurous with your cooking. Previous mistakes may have actually been equipment failures that were not your fault. It’s difficult to work with equipment that doesn’t perform in any endeavor and cooking requires more accuracy than is commonly realized.
